What is meant by “continuous inspection” for poultry processing?

Continuous inspection means that each bird being processed must be inspected. This requires an inspector to be present at all times during the slaughter processing to examine each bird before slaughter and the carcass and parts after slaughter. For processing plants, continuous inspection does not require an inspector be always present, but at least present once a day.
