Oregon has adopted many federal OSHA standards and incorporates them by reference. Oregon OSHA includes some additional sanitation definitions and requirements in Oregon Admin. Rule 437-002-0141. In summary:
Potable water means water that meets the bacteriological and chemical quality requirements prescribed in OAR Chapter 33, Division 61, Public Water Systems, of the Oregon State Health Division.
Sanitary means free from agents injurious to health.
Expectoration (spitting) on walls, floors, workplaces, or stairs of any establishment is prohibited.
Waste materials, such as scrap material or debris, may not be allowed to accumulate in work areas in a way that creates a hazard and must be removed as needed.
- Flammable waste, such as oily rags, must be removed to a safe place or placed in suitable containers.
- Where the operation of machines or equipment creates waste materials that may be hazardous to workers, such machines must be equipped with waste collecting or removal systems, or provisions must be made for temporary safe storage and regular removal of the waste.
Handwashing facilities must be provided in work areas where workers are exposed to hazardous materials that could have a harmful effect on or be absorbed through the skin if not washed off.
Shower facilities must include one shower for every five employees of each sex, or numerical fraction thereof, who are required to shower during the same shift.
Ventilation/smoking: In eating facilities and any other areas where employees work in an enclosed space, exhaust or natural ventilation must be sufficient to prevent excessive build-up of cigarette smoke or other atmospheric contaminants.
